Paladares y Resolver

Hay que propiciar el turismo, pero no de una forma oportunista.

Tourism must be encouraged, but not in an opportunistic way.

The resolver mentality of the Cuban people, which roughly translates to “we’ll figure it out,” has allowed them to participate in the tourism economy for better or worse. One way they have accomplished this on their own terms is through Cuba’s underground restaurants known as paladares. The word, which translates literally to ‘palate,’ is used in Cuba to refer to small, privately-owned restaurants typically inside people’s homes in Havana, Cienfuegos, Camaguey, and other cities across the country. Here, the Pasaporte turístico y gastronómico guides visitors through paladares, as a way to help them experience the cooking and culture of the Cuban people.
